I've compiled xfdesktop without support for exo but I can see with ldd /usr/bin/xfdesktop that /usr/lib/libexo-0.3.so.0 is still dependent of xfdesktop.

Did you build xfdesktop with file icon support?  thunar-vfs is required for that, which pulls libexo in regardless of whether or not you pass --disable-exo.
