I've set the pause to be 2 minutes, with a 30 minute interval.

When the pause starts, it presents me with '3 minutes' for a second.

I'd also like to see a more accurate countdown (ie with seconds) for at least the last minute...

Reproducible: Always

"When the pause starts, it presents me with '3 minutes' for a second."

This has recently been fixed. I already pushed out a new bugfix release for this.

"I'd also like to see a more accurate countdown (ie with seconds) for at least
the last minute..."

Turn on "Display seconds". I don't think it's neccessary to display a more accurate countdown if the seconds are hidden.
