Apart from creating a launcher manually, the only way to add an icon is to use the appfinder and drag it in the launcher settings window. In fact, both of this is awkward to me. So here are my suggestions:

1. One way would be to drag the icon of a window's title bar onto the panel.
2 Second choice would be to right-click an iconbox icon and have something like 'stick to panel', so that the icon stays even if the program is closed.
3. Third choice would be to drag a taskbar/ iconbox item to a launcher area.

I hope that at least two of those options are doable.

Reproducible: Always

You can not read the .desktop information from a running process (which might have various names) so this is not possible without hacks.
Personally I don't see the advantage of this idea since your not adding launcher to the panel all day, so a few clicks extra to create one won't hurt.
We going to improve launcher creating by a better integration in the new app finder, so please wait for that.
