When using xfce4-sensors-plugin I have stuttering in video playback (tried with the players I use: vlc, mpv, mplayer) and games (The Talos Principle) every time the plugin updates its values (since I set it to update every 1 second, I get stuttering every 1 second). Using conky or multiload-ng with the same update interval on the same sensors I get no stuttering at all (everything runs smoothly).
You can't compare the behaviours directly, because depending on the configuration of the xfce4-sensors, values are read via different interfaces. For example, hddtemp can be run as command or communicate via internal sockets. Remove the sensors plugin, does it still stutter? Similar, open the stand-alone application 'xfce4-sensors' and adjust similarly; does it stutter? What is your configuration anyway? distri, cpu, avg load, xfce4-sensors settings etc.
