if I shutdown my computer instantly after typing, my notes for the last few minutes won't be saved. This could be a disaster for some people depending on how important this note was.

Notes should save any typed text instantly without any delay.

Yeah, I just lost my notes from yesterday, from right before I shutdown my laptop. Good that they weren't anything important. It would be great if notes would be saved when Notes window loses focus or/and it gets hidden (closed using X in the window).

I found one workaround - if I write a note and then remove the Notes plugin from the panel, my note seems to get saved. At least I can see it after I re-open Notes app.
